I'm writing a book proposal where I will be interviewing a series of interesting people in a certain discipline. These are people who both helped found and create the field, and who today are taking it in exciting directions. I'd love to hear some reasons as to why you might read, or be interested in reading books about people and hearing their words directly--thank you!

That depends totally on the field you're talking about. I could live and die without another of the so-called celebrity books ever being printed. I could not care less if I tried about some talentless idiot or flotation device enhanced starlet and how many men she had to blow to get where she is. No. One. Cares. If it's something like the pioneers of a field, say genetic research, then you'll have an avid, albeit limited market. It depends on the mass appeal. The book would have to be a valid account, and be presented in an authoritative way. Good luck!
